Description: Anyone who has grown vegetables and/or fruit trees is often faced with more produce than can be eaten fresh. The first part of the class will cover the vegetables and fruits that are best for freezing and canning. It will review the equipment needed for canning and freezing, and various techniques and procedures that are used for safely preserving foods.

The second part of the class will cover jelly and jam making, of the high sugar, low sugar and no sugar varieties.
